4 tablespoons  grenadine

directions

Blend together ginger ale, grenadine, orange juice, and sherbet. Pour into ice-filled cocktail glasses. (To make a version with alcohol, add white rum.)

Watermelon Martinis

Fresh watermelon blended with lemon vodka, lime juice, and Cointreau makes a refreshing drink.

 ingredients

5 cups  watermelon cubes (rind and seeds removed)
3/4 cup  lemon vodka
6 tablespoons  lime juice
3 tablespoons  Cointreau or triple sec
3 tablespoons  sugar

directions
1.
Place watermelon in blender. Cover; blend until smooth. Pour puree into a pitcher and keep very cold, even a little frozen to make it icy.

2.
For two martinis, add one cup of watermelon puree, 1/4 cup of lemon vodka, two tablespoons of lime juice, one tablespoon each of Cointreau and sugar to the blender with three to six ice cubes. Cover; blend until slushy. Makes 6 large martinis.

Electric Lemonade
Fresh mint and lemon juice brightens this tangy cocktail.

 ingredients1 cup  fresh squeezed lemon juice1/4 - 1/2 cup  sugar1/2 cup  fresh mint leaves1 cup  sparkling mineral waterDash ginger ale2 - 3 cups  ice1 cup  vodkaFrozen vodka or sparkling mineral waterMint sprigs and lemon slices for garnish

Chill 4 serving glasses in the freezer. Combine lemon juice, sugar, mint, mineral water, ginger ale, and ice in a blender. Slowly blend until thick.

Remove the four glasses from the freezer and pour a jigger (1/4 cup) vodka into each. Top with frozen lemonade mixture.

    For a delicious cocktail, combine fresh peach puree, ginger syrup, lime juice, peach juice, tequila, and Triple Sec.

     ingredients
    12 ounces  fresh peach puree or pureed frozen peaches
    4 ounces  ginger syrup
    2 ounces  lime juice
    6 ounces  peach juice or nectar
    6 - 8 ounces  tequila
    3 - 4 ounces  Cointreau or Triple Sec
    Lime slices for garnish

    directions
    1.
    Place pureed peaches, ginger syrup, lime juice and peach juice or nectar in a blender and mix together. Pour the mixture into a bowl and place in the freezer. When ready to serve, add tequila and Cointreau. Combine well and serve with lime slices. Makes 8 generous margaritas.

    Angostura bitters
    Lime wedges
    Mint leaves

    directions
    1.
    In a glass pitcher combine the pisco or rum, guava nectar, sugar, and lime juice. Add a few shakes of Angostura bitters; stir well to dissolve sugar. Divide mixture among 4 glasses. add ice; top with a lime wedge and fresh mint. Makes 4 servings.

    Fresh Melon Quenchers
    Pureed fruit blended with ice and sparkling water makes a refreshing summer drink. A spoonful of yogurt adds creaminess, while a skewer of fresh fruit makes a pretty garnish.

     ingredients
    1 - 1 1/2 cups  cantaloupe, honeydew, or watermelon puree*(about a quarter of a 4 lb. melon)
    3 ice cubes
    1/4 inch slice fresh ginger, grated
    Plain low-fat yogurt
    1 - 2 teaspoons  honey
    Shredded lime peel (optional)
    Plain or flavored sparkling water
    Frozen Melon Drink Skewers (recipe below)

    directions
    1.
    In blender container combine melon puree, ice cubes, ginger, a teaspoon or two of yogurt, and honey. Blend just until mixture is frothy and smooth. Pour into serving glass. Add additional honey to adjust sweetness. Stir in lime peel to taste. Add sparkling water to fill glass. Serve with Frozen Melon Drink Skewers. Serve immediately.

    Coarsely chop melon and transfer to blender container. Cover and blend until smooth. If needed, stop motor and press fruit down into blades with rubber spatula or spoon and continue to blend until smooth.

    Watermelon Cooler Punch
    Blended watermelon combined with white grape juice, lime juice, sugar, mint, and club soda makes a refreshing summer drink.

    3 cups  coarsely chopped seeded watermelon
    3/4 cup  sugar
    1/2 cup  lightly packed fresh mint leaves
    2 cups  white grape juice
    1 teaspoon  finely shredded lime peel
    3/4 cup  fresh lime juice, chilled
    32 ounce (4 cups) club soda, chilled
    Fresh mint sprigs (optional)
    Watermelon wedges or balls (optional)

    directions
    1.
    Place watermelon in a blender or food processor. Cover and blend until smooth. Strain watermelon puree through a fine mesh sieve; discard pulp.

    2.
    In a large bowl combine sugar and mint. Using the back of a wooden spoon, lightly crush mint by pressing it against the side of the bowl. Add grape juice, lime peel, lime juice, and watermelon puree, stirring until sugar is dissolved. Stir in club soda. Serve in glasses over ice. If desired, garnish with mint sprigs and watermelon wedges or balls. Serve immediately. Makes 9 servings.

    3 cups  water
    1 1/2 cups  sugar
    1 3 ounce package peach-flavored gelatin
    1 29 ounce can peach slices in light syrup
    4 11.3ounce can peach nectar
    1/2 cup  lemon juice
    8 10 ounce bottle ginger ale or club soda

    directions

    In large saucepan combine water, sugar, and gelatin. Bring to boiling, stirring to dissolve.

    2.
    Place undrained peach slices in blender. Cover; blend until smooth. In extra-large bowl combine gelatin mixture, pureed peaches, peach nectar, and lemon juice. Divide peach mixture among four 1-quart containers. Cover and freeze overnight or until firm. NOTE: Mixture can be frozen up to 3 months. Use as many containers as needed to continue with Step 3. (Each quart makes 6 servings.)

    To serve, place one or more containers at room temperature for 1 hour. Break in chunks with large fork. Place in punch bowl or jug. Stir in 2 bottles of ginger ale per container of peach mixture until slushy. Makes 24 servings (four 6-serving batches).

    1 cup  lime juice

    Ice
    1 750 milliliter bottle Pinot Noir or Syrah, chilled
    1 nectarine, pitted and sliced


    directions
    1.
    In a 1-quart glass measuring cup combine lime peel, lime juice, and sugar; add water to equal 4 cups. Stir to dissolve sugar. Cover and refrigerate at least 2 hours.

    2.
    To serve, place ice in six 16-ounce glasses. Add 2/3 cup of the lime juice mixture to each glass. Pouring along side of glass, slowly add 1/2 cup wine. Thread nectarine slices on skewers and add to glasses. Serves 6.
