Lemon Meringue Martini


So, today is National Lemon Meringue Pie day, and while I love pies, they're such a hassle to make. Seriously, something always goes wrong. So instead of spending hours in a hot kitchen, I decided I'll honor the holiday in a simple, yet refreshing way: with cocktails! This recipe takes just 4 ingredients, and you could easily pick up the meringues at your local bakery. Enjoy! 
Lemon Meringue Martini: Serves 4
Ingredients
  • 4 small yellow or white meringues
  • 4 shots limoncello liqueur, plus 1 shot for riming glasses
  • 4 shots vanilla vodka (recommended: Smirnoff)
  • 1/2 cup lemonade
Directions
In a plastic food storage bag, crush the meringues with a rolling pin or your hands. Put the crumbs onto a plate and pour some water onto another plate. 

Put a shot of the limoncello in a small plate. Dip the rim of a martini glass into the limoncello, shaking off any excess, then into the meringue crumbs. Repeat with 3 more glasses and set aside while you make the drink.

In a pitcher filled with ice, pour in the 4 shots of limoncello, the vodka and the lemonade and stir. Strain the drink evenly into the 4 prepared glasses and serve.
